  • 300g chicken breast, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 200g egg noodles
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 green onions, chopped
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water (optional for thickening)
  • Salt and pepper to taste

  • Bell Peppers: You can use any color bell pepper or add other vegetables like carrots or snap peas.

Instructions

  1. Step 1: Cook the noodles according to package instructions, drain, and set aside.
  2. Step 2: Heat the wok and add 1 tablespoon of vegetable oil. When hot, add the sliced chicken. Stir-fry for 4-5 minutes until the chicken is cooked through. Transfer to a plate and keep warm.
  3. Step 3: In the same wok, add another tablespoon of oil. Add the minced garlic and ginger, and the white part of the green onions. Stir-fry for about 1 minute until fragrant.
  4. Step 4: Add the bell peppers to the wok. Stir-fry for 3-4 minutes until they begin to soften but still retain some crunch.
  5. Step 5: Return the cooked chicken to the wok and mix it well with the bell peppers.
  6. Step 6: Add the cooked noodles, soy sauce, oyster sauce, hoisin sauce, and sesame oil to the wok. Stir everything together to combine, cooking for another 2-3 minutes.
  7. Step 7: If you prefer a thicker sauce, add the cornstarch mixture and cook until it thickens slightly.
  8. Step 8: Season with salt and pepper to taste, and sprinkle the green parts of the green onions before serving.

Notes

Make sure to keep stirring continuously to ensure even cooking and prevent burning. High heat is vital for the best results in wok cooking.
