I’m really excited to share with you one of my absolute favorite dishes – Chinese Lamb Stir Fry. Originating from the rich culinary traditions of China, this dish is a unique combination of tender lamb and vibrant vegetables, all brought together with delicious seasonings.

Ingredients

  • 500g lamb shoulder, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 100g snow peas
  • 2 spring onions, chopped
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 1 tsp cornstarch mixed with 2 tbsp water (optional for thickening)
  • Salt and pepper to taste

Substitutions and Variations:

  • Vegetable oil can be substituted with peanut oil for a richer flavor.
  • You can use beef or chicken instead of lamb.
  • For a vegetarian version, replace lamb with tofu.

Instructions

  1. Heat the Wok: Add 2 tbsp of vegetable oil and 1 tbsp of sesame oil to the preheated wok.
  2. Cook the Lamb: Add the sliced lamb to the wok and stir-fry on high heat for 3-4 minutes until browned and almost cooked through.
  3. Remove the Lamb: Take the lamb out of the wok and set aside. This prevents overcooking.
  4. Stir-Fry Vegetables: Add the onion, cooking for 1-2 minutes until slightly tender. Add bell peppers and snow peas, stirring constantly for another 2-3 minutes.
  5. Combine Ingredients: Return the lamb to the wok. Pour in the sauce mixture and stir well.
  6. Thicken the Sauce: If you prefer a thicker sauce, add the cornstarch and water mixture. Stir until the sauce thickens slightly.
  7. Final Touches: Season with salt and pepper to taste. Add chopped spring onions just before turning off the heat for added freshness.

Notes

Use high heat when cooking with a wok. This ensures quick cooking and retains the flavors and textures of the ingredients.
