Today, I’m very happy to share with you a each recipe for Chinese Salt and Pepper Tofu. Originating from the bustling kitchens of Southern China, this dish is known for its simplicity and robust flavors.

Ingredients

  • 400g firm tofu
  • 3 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp white pepper
  • 1 tsp Sichuan peppercorns (optional)
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 red chili, finely chopped (optional)
  • 2 green onions, chopped
  • 1 tsp sesame oil
  • ½ tsp sugar

Substitutions and Variations:

  • Tofu: You can substitute firm tofu with extra-firm tofu for a chewier texture.
  • Sichuan peppercorns: If unavailable, you can skip them, but they do add a unique zesty flavor.
  • Chili: Adjust the amount or omit it based on your spice tolerance.

Instructions

  1. Coat the Tofu: Place the tofu cubes in a bowl and add the cornstarch. Toss until each piece of tofu is evenly coated.
  2. Fry the Tofu: Heat the vegetable oil in the preheated wok. Add tofu cubes in a single layer and cook for about 5-7 minutes, turning occasionally, until they’re golden and crispy on all sides. Remove the tofu and drain on a paper towel-lined plate.
  3. Stir-Fry Aromatics: In the same wok, add the minced garlic and red chili. Stir-fry for about 1 minute until fragrant.
  4. Combine Tofu and Seasonings: Add the crispy tofu back into the wok. Sprinkle the mixed seasonings over the tofu. Toss everything together to evenly coat the tofu with the seasonings.
  5. Finish with Green Onions: Add the chopped green onions and give a final toss. Drizzle with sesame oil for extra flavor.

Notes

Make sure not to overcrowd the tofu in the wok during frying to ensure they get properly crispy.
