  • 200 grams of bamboo shoots, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sugar
  • 1 teaspoon of cornstarch
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 green onions, chopped (white and green parts separated)
  • 1 tablespoon of rice wine or dry sherry (optional)
  • Salt and pepper to taste

Substitutions and Variations:

  • Substitute pork with chicken or tofu for a different protein source.
  • Use canned bamboo shoots if fresh ones are not available.
  • Add vegetables like bell peppers or snap peas for extra color and nutrition.

Instructions

  1. Step 1: Add the minced garlic and ginger to the hot oil. Stir-fry for about 15-20 seconds until fragrant but not burnt.
  2. Step 2: Add the marinated pork slices to the wok. Stir-fry for about 3-5 minutes until the pork is no longer pink and starts to brown slightly.
  3. Step 3: Push the pork to one side of the wok. Add the white parts of the green onions and continue to stir-fry for another minute.
  4. Step 4: Add the bamboo shoots to the wok. Mix everything together and stir-fry for 2 more minutes.
  5. Step 5: Pour in the remaining 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of sugar, and the optional rice wine. Stir well to combine.
  6. Step 6: Add the green parts of the green onions. Toss everything together for another 30 seconds.
  7. Step 7: Taste and adjust seasoning with salt and pepper as needed.

Notes

Always ensure your wok is extremely hot before adding ingredients. This ensures a quick cooking process that retains the crispness of the bamboo shoots and the tenderness of the pork.
